Summer Arugula Salad

· 2 Bunches arugula, trimmed, washed and dried
· 1 Cup(s) Cherry tomatoes, halved
· 1 Cup(s) Sliced cremini mushrooms
· 1 Small red onion, thinly sliced
· 2 Tablespoon(s) Red wine vinegar (for vinaigrette)
· 1 Tablespoon(s) Dijon mustard (for vinaigrette)
· 1/4 Teaspoon(s) Salt (for vinaigrette)
· 1/4 Teaspoon(s) Freshly ground pepper (for vinaigrette)
· 5 Tablespoon(s) Extra virgin olive oil (for vinaigrette)

Step 1: In a large salad bowl, whisk together the vinegar, mustard, salt and pepper. Slowly whisk in olive oil until thick and creamy.
Step 2: Add the salad greens and toss to coat. Add onion, mushrooms and tomatoes and gently toss again. Distribute among salad bowls.
Step 3: Shave large curls of Parmesan directly on top of each salad. Sprinkle with fresh black pepper and serve.
