Smoked Halibut Recipe

· 4 Tablespoon(s) Butter, melted 
· 1 Cloves garlic, minced 
· 1/2 Teaspoon(s) Salt 
· 1/8 Teaspoon(s) Freshly ground pepper 
· 2 Teaspoon(s) Lemon juice 
· 1/2 Cup(s) Dry white wine 
· 1/2 Teaspoon(s) Dried dill weed or dried tarragon
· 2 Tablespoon(s) Freshly chopped parsley 
· 6 Halibut steaks (about 3 lbs) 
· 2 Lemons, cut into wedges 
Step 1: In a bowl make marinade by combining first 8 ingredients. Arrange fish steaks in one layer in a shallow pan. Pour marinade over fish; cover and marinate 1 hour.

Step 2: Remove fish from marinade and place in smoker over medium heat using 2 tablespoons of alder smoking chips for approximately 25 minutes.

Step 3: Serve immediately garnishing with parsley and lemon wedges.
