The Shun Classic 7" Asian Chef's Knife is the Japanese version - also known as a gyuto - of the western chef's knife. It's just as versatile as the western chef's knife, but is lighter and has a thinner blade. The blade has a VG10 steel core wrapped in 16 layers of Damascus stainless steel and a super sharp 16-degree cutting edge. A bead-blasting process creates the beautiful Damascus wood grain pattern, which also reduces friction and prevents food from sticking to the blade. A D-shaped PakkaWood handle, the perfect shape for fingers to grip, backs the blade. As a whole, this knife is a durable, corrosion resistant piece of cutlery.
